My Weekend Breakfast

Hey y’all! I’m back again and today I am excited to share with you my favorite weekend breakfast that is so simple! This is not a ground-breaking recipe by any means, but something about it is just so yummy and makes me feel very healthy lol. It is also great becasue it can be made it large or small batches and is super easy to switch up the add-ins for a completely new twist.

Recently my family has been trying to eat way healthier, I personally have been trying to cut carbs out during the week which is hard for me becasue I am always in the kitchen making sweet treats. Nonetheless, much like other people, I give myself the weekend to cheat a little. Something about a saturday morning breakfast is so relaxing to me and I like having something to look forward to to push through those days when I am seriously craving carbs. This breakfast recipe has become my staple weekend splurge and honestly it’s still very healthy! I normally put this together on friday night that way all I have to do is make a cup of coffee and enjoy!

With all that being said, I am very excited to share with y’all my weekend yogurt parfait! In this recipe I have also included how to make your own granola, you obviously don’t have to do this. Using a store bought maple cinnamon granola will work just as well, but if you feel like getting fancy try it out! I have also listed some fun ways to change this recipe up at the bottom of this post, be sure to check it out ~ Now for the most yummy breakfast ever, let’s get cooking!


Ingredients

  • 1 cup of your favorite fruit or berries sliced. (personally I love strawberries, blueberries and raspberries)

  • 1 cup of vanilla yogurt

  • 2 cups rolled oats

  • 1 cup walnut chips

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp cloves

  • 4 tbsp brown sugar

  • 1/4 cup honey

  • 1/4 cup vegetable oil

Instructions

How to make the Granola:

  1. Preheat oven to 350 degrees.

  2. In a large bowl combine everything except the yogurt and fruit.

  3. Lay parchment paper on a baking sheet and spread granola mixture on the sheet.

  4. Bake for 20 minutes at 350 degrees.

  5. Let chill in refrigerator for 20-30 minutes.

Parfait Assembly:

  1. Slice your fruit into bite size pieces. If you are using berries just rinse them and set aside.

  2. In a bowl place your yogurt as the bottom layer.

  3. Top with fruit, then granola.

  4. Enjoy!


So so simple and this tastes amazing!! Below I have also listed some fun tips and tricks to change up this recipe as well as how you can adapt it to make for a crowd:

Let’s get funky!

  • Make it Fruity: You can pretty much use any fruit that you enjoy! Other ways I have made this recipe include Pineapple, Mango, Blackberries, passionfruit etc. (I would suggest avoiding melons and citrus fruits such as oranges simply becasue sometimes dairy and citrus can make you queasy)

  • Let’s go Greek: Another option to switch up this recipe is to use greek yogurt rather than regular. This makes a thicker parfait and also offers different health benefits!

  • Add a Crunch: If you are like me and enjoy crispier granola you can leave this in for a few extra minutes (25-ish) and let it cool for 10 minutes out of the fridge before placing it in the cold. This will help give the granola an added crunch!

  • Make it for a Crowd: If you are making this recipe for a brunch or for your whole family you can definitely make this in a big batch! I would suggest using the 24oz. vanilla yogurt, you can use two of these if needed. Additionally, I would use 5-6 cups of fruit depending on how many people you will host.

  • Make it Ahead: If you are thinking about making this recipe for a crowd on saturday morning feel free to make it all friday night! My suggestion would be, slice your fruit if needed and make the granola but keep it all separate until you’re ready to serve it. Otherwise you will have red yogurt and soggy granola, and no one likes that! Assemble within 30 minutes of serving for the best results.
