Easy Banana Nut Muffins
Hey y’all! This quarantine is really taking it out of me, and I have been trying to keep up with baking something weekly without having to run to the store. With that being said, I started thinking of things I could make with ingredients I already had at home! I thought I should share this with y’all who may be looking for the same thing. As I sat in my kitchen I saw a bundle of bananas that had clearly seen a better day and instantly thought~Muffins! I have to say, having never made muffins before these turned out amazing, my whole family loved them and even better, they took seriously no time! So let’s get baking!
Ingredients:
3 bananas mashed (More ripe gives a better flavor)
1/4 cup of unsalted butter (melted)
1/4 cup of whole milk (regular milk is fine as well)
1 egg
1 tsp of vanilla
1/2 a cup of brown sugar
1/2 a cup of granulated sugar
2 cups of flour
1 tsp salt
1 tsp baking soda
1 cup of chopped walnuts
Instructions:
Preheat oven to 350 degrees.
In a large mixing bowl add the mashed bananas, melted butter, and milk. Combine until it becomes a smooth batter.
Beat in the egg, vanilla and brown sugar.
Add in remaining dry ingredients (except the walnuts). Once again combine until smooth.
Fold in the walnuts.
Line muffin pan cups with liners. Fill each liner to 3/4 of the way full. If you would like top with granulated sugar or additional chopped walnuts.
Bake for 18-20 minutes at 350 degrees.

Fun substitutes and toppings
The whole point of this recipe is to be able to use things you already have at home. With that being said you can sub in lots of different things and these muffins will still be delicious! Some of my favorites are:
Chocolate chips instead of walnuts (great for kiddos with allergies)
Top with powdered sugar, nutella, honey, or peanut butter~yumm!
If muffins aren’t your thing or you don’t have a muffin tin this can easily be made as a bread!
