My Mom’s Zucchini Bread
Hey y’all! I cannot tell you how excited I am to be writing this post today, I have been slightly zucchini obsessed recently and have been looking forward to sharing this with y’all for a while! This is originally my mom’s recipe that I have since doctored slightly to be more to the way I like Zucchini bread, but either way it is super delicious!
I originally got the inspiration to make this bread on a rainy Sunday morning about a month ago. I was watching HGTV as I usually am and a commercial came on for a cooking special with Joanna Gaines. Now I have truly missed everything about Chip and Jo and Fixer Upper since they left HGTV to start their own network so of course I had to watch! It ended up being the cutest home videos of her and her kiddos cooking during quarantine and one of the recipes that stood out to me was zucchini bread!
I had never made this before and as I sat there with my third cup of coffee and no sunshine in sight, I told my mom I was heading to the store becasue I was going to make bread! Like the good momma she is, there were no questions asked, instead she told me she had a really old zucchini bread recipe that her mom used to make. So of course I had to try it!
This bread came out so amazing and since that day I have probably made it about 16 more times, I know, holy calories right!? I haven’t eaten them all alone, my entire family loves this bread and after handing out 6 loaves to my neighbors I knew this was a perfect go-to recipe for any occasion. Now for the fun part, let’s get baking!
Ingredients
3 eggs
2 cups of sugar
2 cups of flour
1 cup of oil
1 tbsp vanilla extract
2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
2 cups of loosely packed coarsely chopped zucchini
1 cup of chopped walnuts
Instructions
Preheat oven to 350 degrees.
In a large bowl add the eggs and whisk them together.
Next add in all of the ingredients with the exception of the zucchini and the walnuts. Mix the ingredients until it forms a smooth batter.
Chop zucchini into small cubes and add into food processor; chop coarsely and place on paper towel. Repeat with all the zucchini until you have 2-3 cups. (The original recipe calls for 2 cups but I have been using 3 for more flavor)
Once the zucchini has been chopped you must strain the water out of it. Wrap in a paper towel and squeeze until no more liquid comes out.
Add zucchini into the batter and combine thoroughly.
Add in 1 cup of walnuts into your batter and combine thoroughly.
Bake for 1 hour at 350 degrees.

This is truly one of my favorite recipes becasue it is so simple and delicious! This makes for a perfect breakfast or mid-day snack and would be wonderful for kiddos as well.
