Classic Southern Cobbler

Hey y’all! I have been feeling a little blah recently and last weekend was no exception. I had every intention of baking a yummy peach cobbler and for whatever reason it completely didn’t occur to me that peaches aren’t in season yet lol whoops! Well after that minor lapse in judgement I was even less excited to do anything~the quarantine slump is a real thing! I really needed something to get me excited to bake again.

I don’t know who was listening, but the other day I was at Publix like always and as I was in the line to checkout I was browsing through the magazines they had displayed and it was as if my prayers were answered; the second I saw the Southern Living Magazine I felt my mood instantly perk up! They had this gorgeous berry cobbler on the front cover that literally had me drooling in line! So obviously I purchased that magazine and decided to give the recipe a whirl, having never made a cobbler before I figured why the heck not! After getting out of line and gathering everything I needed I was so happy to try baking something new and drove home with a renewed sense of excitement about life!

It seems a bit dramatic, and maybe it is, but all this is to say, y’all things are hard right now, it’s difficult to find things to keep yourself and maybe your kiddos occupied. I have always found baking to be therapeutic, but even still, sometimes it’s a lot of work. I do it becasue it brings be joy and becasue I genuinely love trying out new things in the kitchen, but finding inspiration doesn’t always come easily. A magazine in the grocery store literally changed my entire mood, getting to try this recipe made me so happy, finding sunshine in little things around you can really change your perspective on things.

With all that being said, I am super excited to be writing this recipe today! This one helped me get out of my slump and truly reminded me why I love baking so much, it brings people together over yummy treats and puts a smile on everyone’s face! I know I’m yapping so now for the fun, let’s get baking!


Ingredients:

  • 4 cups of Raspberries

  • 2 cups of Blackberries

  • 2 cups of Blueberries

  • 1 lemon (zested)

  • 1/2 cup sugar

  • 1/4 cup cornstarch

  • 2 tsp vanilla

  • 2 Tbsp butter (cubed)

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1 pre-made pie crust

Instructions:

  1. Preheat oven to 375 degrees.

  2. Chop butter into small cubes.

  3. In a large bowl add the berries and all other ingredients. Mix gently until the berries are evenly coated. Let this mixture rest for 15 minutes in the fridge.

  4. On a floured surface with a floured rolling pin roll out your pie crust into a 10x10 square. Cut the pie crust into 10- 1 inch strips.

  5. Add the berry mixture into a 9x9 baking dish.

  6. Lay the pie crust in a diagonal lattice pattern across the dish. Overlapping every other strip.

  7. Bake for 1 hour at 375 degrees. (Cover with foil after 45 minutes)

  8. Let cool and Enjoy!
