Lemon Blackberry Muffins

Hey y’all I am so excited about this recipe today because I honestly kind of winged it and it turned out even better than I could have imagined! The muffins ended up be so moist and delicious and not too sweet, a perfect combo if you ask me!

This past weekend my brother’s friends took a trip to visit us, he hasn’t seen them since college so we were all pretty excited to have the company. I was mainly excited becasue it gave me an excuse to bake some yummy treats for them! My mom had just come home from the grocery store with everything for the weekend and the thought to bake something never even entered my mind until she brought home store bought blueberry muffins. Now don’t get me wrong, I love those bad boys just as much as any gal, but I immediately thought hmm I bet I could bake better ones!

Of course I wouldn’t turn down the challenge, the only thing was we didn’t have any blueberries in the house. As I dug through the fridge looking for some type of berry that I could throw into a muffin, I remembered that we had leftover blackberries in our drink fridge from a cocktail I had made earlier that week! The inspiration for this muffin partly came from that blackberry lemonade cocktail that I had made, and I thought why not try lemon blackberry muffins!? The streusel topping on these muffins was an idea I had seen on pinterest a few years ago and never had a reason to make it and again I thought what better time than now.

So as you can see these muffins were a bit thrown together from what I had around the house, and honestly that is fine! One of the reasons I love baking so much is that you really can exchange add ins for things that you like and still have a super yummy recipe, you just have to be willing to get a little creative and be fine with them turning out badly if you mess them up! These muffins however, tasted so yummy, my brother’s friends devoured them (literally, a dozen and a half only lasted one morning).

With all that being said, I am very excited to share this whoopsie daisy recipe with you and I hope that y’all find it as delicious as my family and friends did, let’s get baking!


Ingredients

Streusel Topping

  • 1 cup flour

  • 1/2 sugar

  • 1 tsp cinnamon

  • 7 Tbsp unsalted butter (melted)

Muffin Batter

  • 1 1/2 cups flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 2/3 cup sugar

  • 2 Tbsp lemon zest

  • 1/3 cup vegetable oil

  • 2 eggs

  • 2/3 cup Plain Greek Yogurt

  • 4 Tbsp fresh lemon juice (squeeze 1 small lemon and that’ll be enough)

  • 1 1/4 tsp vanilla extract

  • 2 quarts of fresh blackberries sliced in half (save 3/4 cup for topping and the rest for the batter)

  • 1 Tbsp flour


Instructions

  1. Preheat oven to 400 degrees. Line your muffin pan with paper liners. (This recipe made 17 muffins total so you will likely need two pans)

  2. Make Streusel Topping: In a small bowl whisk together sugar, cinnamon, and flour. Slowly combine in the melted butter and combine with a fork until crumbly. Let rest at room temp while completing your muffins.

  3. Make Muffin Batter: In a large bowl combine baking powder, flour, and salt. Set to the side.

  4. In a medium bowl add your granulated sugar and lemon (mix these together first).

  5. To your sugar and lemon add in eggs, oil, vanilla extract, Greek Yogurt and lemon juice. Whisk until your mixture is a pale yellow and smooth.

  6. Fold the wet ingredients into the large bowl of dry ingredients. Combine until smooth.

  7. Leaving 3/4 cups of blackberries on the side, place the rest of the berries in a bowl and coat with 1 Tbsp of flour. (this ensures the berries won’t sink in your batter) Then fold them gently into the batter.

  8. Spoon batter into your lined muffin tins. The cover the batter with the berries that you have set aside, and top with the streusel topping.

  9. Bake for 5 minutes at 400—lower the oven temp to 370 after five minutes—continue to bake for an additional 15 minutes.

  10. Enjoy!


That’s all there is to it my friends! The one thing I will say about his recipe that was kind of a pain is the amount of bowl and subsequently clean up that was required, I am not a fan of dishes lol. But, if you try and just throw it all in one big bowl I promise you they will not come out right. So I would highly recommend just sticking it out and following the recipe becasue you will not want to miss out on these tasty muffins!
